Rice Pudding with Fruits, Almonds and Raisins

Time: 40 minutes
Portions: 4
INGREDIENTS
- 1L Milk (rice, coconut, dairy, your choice)
- 2tbsp Agave syrup (or any sweetener of your choice)
- 1 vanilla bean (you can also use extract)
- 1 pinch of salt
- 250g rice pudding
- Fruit of your choice
I used mango, grapes, melon… - 1tsp raw cane syrup (or any other sweetener)
- 5tsp coconut chips/flakes (or something crunchy you want to add)
- Almonds and Raisins
PREPARATION
- Mix milk, agave syrup, vanilla, salt and rice pudding and bring to a boil over low heat, stirring occasionally. Seal the pot with a lid, reduce the temperature and swell the rice for about 25 minutes.
- Wash, peel cut your fruit into small cubes. Mix fruit with sugar in a bowl and leave.
- Wrap it in a cloth and crush your coconut (or cookies) with a rolling pin.

Arrange layers of the finished rice pudding with fruit salad in glass jars and sprinkle with coconut chips or crushed biscuits, the almonds and raisins.
