Food Gift Recipe: Clementine & Lemon Curd
- 200 g caster sugar
- 1 lemon zest
- 125 ml clementine juice
- 4 whole eggs
- 2 egg yolks
- 100 g butter
- 2 clementines zest
- 2 tbsp lemon juice
- Preheat an oven to 140°C. Wash your presentation jars in hot soapy water and dry thoroughly, then place into the oven to sterilise for 30 minutes.
- Beat the eggs, extra egg yolks, sugar and zest of both the clementines and lemon into a large heatproof bowl. Cube the butter and add to the mixture along with all the juice.
- Place the bowl over a pan of simmering water and heat until the mixture thickens, making sure you stir continually. Pour the hot curd into the sterilised jars and seal the lid. These are best stored in the fridge for up to 3 weeks.
