So far I had made the “classic” hummus, until I found this recipe with black olives and… leftover tomato sauce?? yes, and I loved it. I had it with tortilla chips but you can enjoy it as snack with veggies. If you try it, let me know how it went!

Tapenade Hummus
INGREDIENTS:
- 1 can chickpeas
- 1/3 cup pitted black olives
- 1 chopped roasted red pepper
(this I replaced it with some leftover homemade tomato sauce I had) - 2 Tbsp lemon juice
- 1/4 cup parsley leaves
METHOD:
- Mix everything in a food processor (I didn’t completely puréed, I like having some texture from the olives roughly chopped)
- Add a bit of olive oil until the desired consistency or moisture.
Enjoy with tortilla chips, carrot, cucumber sticks or any other veggie of your preference!
