Recipe: Tapenade Hummus

Recipe: Tapenade Hummus | ecogreenloveSo far I had made the “classic” hummus, until I found this recipe with black olives and… leftover tomato sauce?? yes, and I loved it. I had it with tortilla chips but you can enjoy it as snack with veggies. If you try it, let me know how it went!

Tapenade Hummus

  • Time: Prep: 20 mins Cook: 0 mins
  • Difficulty: easy

INGREDIENTS:

  • 1 can chickpeas
  • 1/3 cup pitted black olives
  • 1 chopped roasted red pepper
(this I replaced it with some leftover homemade tomato sauce I had)
  • 2 Tbsp lemon juice
  • 1/4 cup parsley leaves

METHOD:

  1. Mix everything in a food processor (I didn’t completely puréed, I like having some texture from the olives roughly chopped)
  2. Add a bit of olive oil until the desired consistency or moisture.

Enjoy with tortilla chips, carrot, cucumber sticks or any other veggie of your preference!
