Recipe: Vegan Coco-Mint ice cream

Recipe: Coco-Mint ice cream | ecogreenlove

First time I make ice cream. Bought the machine on a flea market and so far has been a great yummy experience. If you try it, let me know if you liked it!

Vegan Coco-Mint ice cream

  • Servings: 4-8

INGREDIENTS
Note: an ice cream machine is needed

  • 1.5 cups of full fat coconut milk (1 can)
  • 1/3 cup of sugar
  • 1.5 Tbsp corn starch
  • handful of sprigs of mint
  • 1/8 tsp of salt
  • optional: chocolate sauce for top (I didn’t use)
  • optional: green food colorant (I didn’t use)

METHOD

  1. In a small bowl mix 1/4 cup of the coconut milk with the cornstarch and whisk until it’s fully dissolved
  2. In a small saucepan, heat the remainder of the coconut milk over low heat with the sugar and stir until is dissolved
  3. Whisk in the cornstarch mixture and the mint. Bring to a low simmer and stir for a few minutes
  4. Remove from heat, cover the pan and let it steep for 20mins. Then place it in the fridge until chilled
  5. Strain out the mint, and follow the directions on your ice cream maker
    (this would be the time to add the food colorant if you choose to use it, otherwise the natural ice cream will be white, as in picture)

Note: If the ice cream is still not solid enough, leave it in the freezer for at least 30mins more. Serve with chocolate sauce if desired.
