A basic recipe for scones, in which you can add your own favourite fruit

Basic Blueberry Scones
INGREDIENTS
- 2 1/2 cups flour
- 1 Tbsp baking powder
- 1/2 tsp salt
- 8 Tbsp butter
- 1/4 cup sugar
- 2/4 cup milk
- a handful of blueberries
METHOD
- Heat oven to 220°C
- Mix flour, baking powder and salt. Add butter until feels like granulated mix
- Add sugar, and then add milk, stir with a fork. Add the blueberries at last and mix smoothly with an spatula
- Roll and form a ball, cut in wedges
- Place in oven separated from each other and bake for about 12 mins. (You can add sugar or cinnamon in top)

We are lucky, we can forage for blackberries, raspberries, bilberries, apples … and various other fruits in the woods and wild areas around where we live. Our fruit-picking season starts in July and goes through to September with the different fruits. The harvest does depend on the weather – we need dry sunny weather for blossom time but also enough rain to make the fruits swell too. Usually our UK weather works out, but we seem to be having cold winds in June this year, so we will have to see what happens with the fruit this time.
